Easter Weekend we had brunch at Irene Dairy Farm, Centurion. They have this awesome deli with all kinds of sweets, rusks, coffees, jams and relishes. Hubby bought this Ring of Fire relish to enjoy with our breakfast - it was absolutely delightful!!!Just enough heat, a perfect balance of sweet, savory & sour - nothing that overpowers. Sooo good! Now to find a stockist in Johannesburg.I even made delicious muffins with it!!!TOMATO CHILLI RELISH AND GOAT CHEESE MUFFINSMakes 6 big muffins1 cup self-rising flour1 large egg1/2 cup milk1/4 cup oilSalt (about 1 teaspoon)1/4 cup Wildebraam Ring of Fire tomato chilli relish + extra for topping6 squares of goat cheeseGrated Gouda cheese for toppingPreheat oven to 220 oC. (Or check for Sunbeam Convection oven temp.)Mix the relish, egg, oil, salt and milk together. Add the flour and stir. Spoon into greased 6 muffin pan. Press a square of goat cheese into each mixture, top with little bit more relish and finish with grated cheese. Lovely all around, abit noisy due to gravel roads but it isn't bothersome. Views are incredible and Natalie is so friendly and helpful.
